Recipe Round Up - Chicken Florentine

Well they can't all be winners! My mom recommended this one to me, she makes a slightly modified version and uses low fat ingredients to make it healthier. It's a Paula Deen recipe and you can find it here.

I'm sorry to report that this one was a complete failure for our family, 0 for 3. When I tried to give it to our kiddo she started crying, badly and it only got worse. To be honest it did kind of smell unappetizing to me too. I gave her some tomatoes to appease her a bit, she usually really likes tomatoes, but she couldn't calm down enough to eat them until the oh so offensive food was removed from her plate.

I was surprised that not even I liked it. It sounded so good, in theory; I was looking forward to something hot and creamy on a cold night. Plus I like spinach and artichoke dip and and this sounded kinda like that, minus the artichoke and apparently the tasty goodness too! I can't quite put my finger on why we didn't like it, but we've got the leftovers boxed up for my mom. She's coming over tomorrow so we'll send them home with her. She's made it and liked it, so maybe she can try ours and tell us 1. If we made it right or 2. If that's how it's supposed to taste and it's just not our cup of tea.

It's funny how much taste can vary from person to person. When we lived in CA a lot of our friends ate mangoes. Neither Brad nor I had ever tried one, frankly I thought they looked a bit weird. Decided to be mature about the whole thing; take a big girl pill and try one. Bought it and tried it. We both thought it was terrible, but we also thought it tasted a bit off. Maybe we had a bad one we thought. A bit later when we were visiting Brad's mom she served a mango. Remembering the last one, which surely had to have been going bad, we both hesitated to try it. Then my dear MIL mentioned how this was a really good mango. So we both thought, now's our chance to really try a good ripe mango. Turns out, the off taste we thought our mango had...is it's taste. Lesson learned: We really don't like mango.

I actually LOVE Paula; love watching her shows because of her personality. She's definitely someone I'd have over any day. My parents and brother have eaten at her restaurant The Lady and Sons and raved. So I feel badly saying we didn't like one of her dishes, maybe the full fat version is better. Although like I said my mom makes a low fat version and likes it.

So to redeem things, here another Paula Deen recipe. These cookies are a family favorite at Christmas time. I really love them, they might be my all time favorite cookie ever. I'd eat them all the time if the waist band could take it! Seriously, I could eat an entire batch!

  2. LOL! I guess I don't blame you guys for not liking the dinner:) I'm not a fan of artichokes- yuck! But you tried something new, thats all that matters. I have a recipe for Pepperoni Pizza Pasta that I want to share with you- we loooove it ♥ I'll send it later today!

  7. Anna: Maraschino cherries are purchased in a glass jar containing liquid. Candied cherries are usually available around the holiday season, and they are packaged in a thick, sticky liquid. I usually find them in plastic containers. Candied cherries can be either red or green.

    Everyone: I believe Katie's Chicken Florentine tasted almost like mine, and she and her husband just don't like the lemon & curry flavors in this dish.

    My kids would be making nasty comments. They don't like a lot of stuff I make. Picky kids. Thanks goodness my Hubby does or I would think I was a bad cook:)
